结论


葡萄酒无疑是一个非常复杂的分析矩阵。 其化学和仪器分析通常需要对样品进行预处理,以消除那些会干扰分析的化合物。 这种额外的程序既费时又费钱。 我们已经通过统计分析表明,一些最重要的酿酒参数与表面张力显着相关。 乙醇浓度已被证明是其中最好的负相关参数。 从 20 个葡萄酒样品的分析中获得的线性预测模型非常有效,因为它可以解释高达近 91% 的乙醇含量变化。 通过包括 30 个以上的样本来扩展模型产生了令人满意的结果。 提议的线性模型解释了 81% 的乙醇含量变化,估计的标准误差为 0.36% (v/v),为酿酒师进行常规分析提供了一个有趣的工具。 必须进行更深入的研究,以便为蛋白质和单宁等化合物建立可靠的类似预测模型,否则需要费力的方法来确定它们。
